• 1/2 cup dry garbanzos (soak overnight and rinse before using)
  • 2 ripe tomatoes
  • 1 med yellow onion
  • 5 - 10 small sprigs parsley
  • 3 small sprigs mint
  • 2 cloves garlic
  • 3 Tbs. olive oil
  • Lemon juice to taste
  • 1 tsp. sea salt (or to taste)
  • Fresh ground pepper (much as you like!)


  • Place the garbanzos into bowl and start covering them with the olive oil and lemon juice. Dice onion and tomatoes. Use scissors to cut parsley into small pieces. Finely mince the garlic and mint leaves together. Salt and pepper it up then mix it all together! Add a spoon and its perfect!
