Lentils and fruit? Why not?! Green lentils have a nutty, sweet taste that is intensified by the luxurious Mango Dressing. Truly fresh and healthy yet with a suggestion of voluptuous decadence! 2 cups of Lentils sprouted 3 days. Place the finished lentils in a nice big bowl. We like green lentils for this salad since the green color goes well with the orange mango and green lentils are nice flat discs, big and sweet. But you can use any of our lentils for this! There are so many beautifully colors! Experiment!
DIRECTIONS
1/4 cup firmly packed dried mango slices.
Place the mango slices in a small bowl and cover with hot water until softened. This will take about 5 minutes. (You can use warm or cold water, too; they will just take a bit longer to soften.)
Drain lightly and place in your food processor with...
1/4 cup olive oil
2 tablespoons vinegar (we use rice or apply cider vinegar, but you could also use balsamic --which will darken the dressing--or a fruit vinegar such as raspbery.)
1 tablespoon agave or honey
a pinch of salt, if desired (this brings out the sweet and savory).
A dash of pepper.
Blend together until the mango is in tiny chunks of orange color. Scrape the dressing out with a spatula and mix directly into the lentils. You can add 1/4 cup of raisins at this point if you like them (not everyone does). Golden raisins are very pretty in this salad.
Mix with Lentil Sprouts.
Serve with a garnish of grapes, slices of red pear or tart apple.
